Please forgive me for being slightly misleading with my title.

There are no black eyed peas in this dish.

There should have been but in Rob’s enthusiasm to clean out the freezer, we swapped cooked flageolet beans. Considering the beans are completely smothered in the coconut curry sauce (true to the title of the recipe), one may not be the wiser. Read the rest of this entry »

Vegan Butter Chickpeas

Before I was vegan, the only Indian food I liked was butter chicken. Then I met Rob and we explored lots of great, naturally vegan curries. While we have veganized some of Rob’s favourite curries (see this Vegan Khao Soi), I never even thought to veganize butter chicken.

Between holiday parties, preparing for your own holiday (lights, decorations, etc) and always more busy at work, December has to be one of the busiest months of the year. I was not prepared to join in Sam and Andrew‘s Vegan Mystery Box Challenge but once I heard the three ingredients were cranberries, pistachios and coconut milk, I just had join in.

Vegan Cinnamon Snaps

This weekend was cookie overload.

I baked 110 cookies Saturday morning and by the end of the day, I had sampled 7 different cookies and returned home with 7 different cookie dozens. Yes, I went to my first vegan cookie exchange!!

I wanted to keep it a secret, so I could look pretty awesome with 8 different cookies come Christmas, but I already told my mom, so now it can be public knowledge. Read the rest of this entry »

Slow Cooker Butternut Squash Curry-Chili

With only a slight delay, here is how I devoured the other half of the butternut squash. I usually split the butternut squash in half, using the straight “column” first and using the “bulb” part the second time. Mostly because it is always easier to peel and chop the tubular part.

In any case, funny shapes of winter squash don’t matter in this delicious chili-curry. I suppose that would make it a churry. Or a cilli. As soon as I saw Alexis’s recipe, I knew I wanted to make it. Read the rest of this entry »

Butternut Squash Farinata with Arugula Salad and Pomegranate Vinaigrette + Crossroads Cookbook Review

It took me a while, but I finally broke out the winter squash. I always feel like I need a few recipes to work through one butternut squash. This one is a winner and I encourage you to try it out.

This Butternut Squash Farinata is basically a variation on my Mediterranean Crustless Chickpea Flour Quiche with winter herbs including thyme and sage speckled with silky orange jewels of butternut squash. Here it is paired with a lovely, albeit optional, Spinach Salad with Farro and a Pomegranate Vinaigrette. With a bold title, Eat Like You Give a Damn, it seemed fit to share this lovely cookbook around the holidays. With the American Thanksgiving/Thanksliving wrapping up and Hannukah/Christmas season quickly approaching, it should be a season for giving a damn. No?
