Quick Roasted Tomatoes on Toast

So how about more tomatoes? Ooey, gooey, melt in your mouth roasted tomatoes. But you don’t have 45 minutes to an hour to wait, or even 3 hours for a  super slow roast. Because you might have a baby that doesn’t leave you much time between his eat-sleep-poop cycle.. How about 20 minutes? Maybe that’ll work, just maybe.

Quick Roasted Tomatoes on Toast

Crank up your oven and sure enough in 20 minutes, you, too can have meltingly soft roasted tomatoes. Pick the tiniest, sweetest cherry tomatoes you can find. Here I used Chadwick cherry tomatoes and the black cherry tomatoes form my garden. As you can see, the black cherry tomatoes are more of a darker maroon, rather than purple or black.

Quick Roasted Tomatoes on Toast

You can use the tomatoes in a variety of ways – add to a salad, blend into a rose sauce – or in this case, go as simple as a piece of toast slathered with hummus or mayonnaise and then generously cover with the roasted tomatoes. It can be a little sloppy to eat, so I don’t particularly recommend eating it on top of a baby. Unless your baby likes tomatoes on their head or you like to do extra laundry. Just saying.

Quick Roasted Tomatoes on Toast

Quick Roasted Tomatoes
Adapted from Food52: A New Way to Dinner

6 cups cherry tomatoes (I used a mixture of Chadwick cherry tomatoes and black cherry tomatoes)
6 cloves garlic, smashed
Olive oil
Salt

1. Preheat oven to 425F.

2. Place tomatoes and garlic on a heavy baking tray lined with a silpat. Make sure they are in a single layer. Drizzle with a generous amount of oil and season generously with salt.

3. Bake at 425F for 20-30 minutes until they are roasted, blistered and releasing their juices. Remove from oven and allow to cool. Store the tomatoes, garlic and collect all the juices and oil, too.

Store in the refrigerator for up to 2 weeks.

mayonnaise or hummus
bread, toasted

1. Make an open sandwich with toasted bread, brushed with mayonnaise or hummus and topped with the roasted tomatoes.
