BBQ Roasted Chickpea Salad

As the hot summer persists, let us marry the perfect summer eats. BBQ and salads. And for those without a BBQ, have no fear, this one is for you.

No BBQ needed, the BBQ flavour is completely from the roasted chickpeas. A bit more complex than my bacon-flavoured chickpea croutons, but definitely not any harder than pulling out a few more bottles, these roasted chickpeas are awesome. Smoky, savoury and delicious. You could just eat them with your hand (totally guilty) or add them to a salad for a more complete meal. Here I paired it with salad with mixed greens, cherry tomatoes, purple cabbage, shredded carrots and avocado with a splash of lemon juice. Mix it all together for a fabulous meal.

The smoky roasted chickpeas comes from Somer McCowan’s new cookbook, The Abundance Diet. Somer blogs at Vedged Out and is the originator behind the vegan extra sharp cheese ball and fresh vegan moxarella (a revised version of the mock mozzarella is in her book). The cookbook was borne out of her previous Green Smoothie Challenge. 

I am always anxious of leafing through cookbooks marked with words such as ‘diet’, ‘detox’, or the like, but I have no reservations about this cookbook. Somer’s recipes are all gluten-free, plant-based vegan recipes and also, to the astute eye, also free of oil and refined sugars. (The tip-off are the lack of oil in the soups and stews, as I am accustomed to sautéing my onions in oil). Otherwise, the recipes are filled with an abundance of vegetables for creative meals that are relatively easy to make, too.

The recipes span the entire day (breakfast to lunch to dinner including snacks) because there are meal plans that span 28-days (they can be found here if you want a preview). She includes recipes for 26 salads and dressing.  The Lentil taco salad was fabulous (even without the roasted red pepper dressing) and her Ultimate Lentil Salad reminds me of my own 11-Spice Lentil Salad with Capers and Currants (and always a hit). Her soups are equally enticing, with meal-type soups like Quinoa Minestrone and her Smoky Split Pea Soup. Others are more vegetable-based which are more suitable as appetizer.

I enjoyed her Moroccan Lentil Soup even though I substituted a handful of fresh dill for the parsley/cilantro. She also has a main dish section with recipes I have been eyeing, such as Chiles Rellenos Casserole Bake with Smoky Chipotle Enchilada Sauce and Homestyle Mexican Casserole. Green smoothies, juices, snacks, dips and desserts round out the cookbook to keep you full throughout the day.

I remember when cookbooks were mostly text, but it is so nice to see excellent photography. Ann Oliverio photographed most of the recipes and they are a treat throughout the cookbook. Just look at the delicious cover photography highlighting the Funeral Potatoes. A funeral for your fat?

Of note, while this is a diet based on vegan abundance, Somer’s narrative highlights the potential ways to expedite weight loss. Some people may not like this tone and I suggest simply enjoying the recipes. Not a fan of stevia? (Me, neither). Simply substitute dates instead for the smoothies or all coconut sugar in other desserts. Or in my case, add some beans to the vegetable-centric meals. In all, the recipes look great and only on closer inspection do they jump out as diet food.

Fresh Tofu and Strawberry Salad with Mosto Cotto

If you are interested in the quickest of complete meals, this is what I ate most of last week after our move.

We found a nearby restaurant that makes its own homemade fresh tofu. Tofu made without any preservatives, they warned us it would spoil faster than commercial tofu. We got some for take-away and quickly ate through it.

I thought I knew a lot about tofu but this was different. Airy and light. (Despite my description, this is not silken tofu since they sell that too and I got the regular fresh tofu). Because it was so fresh, it was silky smooth and I did not feel the need to do anything to it. No marinade, no baking, no frying, simply nothing.

It was a perfect addition to a quick salad. I added it to some other local specialties (fresh strawberries!) and made it into a simple salad after biking home from work. Pictured here with mixed greens and cucumber with a drizzle of mosto cotto, with a nod to my previous Vegan Green Power Bowl.

What a weekend, guys! Rob always complains the May long weekend is fraught with rain but this year, the rain was pushed away by all the sun. (We even managed to dry some clothes outside!)

It was a glorious long weekend and it was nice that my body was as eager to move around too. Rob and I spent a lot of time visiting family and friends, and the majority were stopping by our friends unannounced simply because we were in the neighbourhood. The stars were aligned because someone was always home for our impromptu visits. Score!

I finally have my cooking mojo back although my blogging mojo is still lagging behind. With the nice weather, I am drawn more to walking in my ‘hood instead of sitting in front of my computer. One thing that has helped to get me cooking again is the multitude of fabulous vegan cookbooks hitting the shelves. One of them is Annie Oliverio’s new cookbook, Crave, Eat, HealYou have probably met Annie through her blog at An Unrefined Vegan where we she shares plant-based recipes without refined ingredients. Her cookbook has the same philosophy and aims to show that there should be no deprivation. All of your cravings are answered.

Annie’s cookbook is broken down into 13 chapters, each focusing on a different craving: carbs, chocolate, comfort, cool, creamy, crunchy, green, junk, salty, spicy, sweet, tart and warm. I am used to the traditional setup of cookbooks organized by course or season, but this was unique. Oftentimes, I do have cravings for something with chocolate, or something crunchy, and this would be a different way to find something satisfying to eat. With this warm weather, of course, I ventured into the “cool” cravings. There were coolers, smoothies and popsicles. Even a sweet potato pie and apple pie spice ice cream that looked phenomenal (and totally happening next weekend). But I decided I needed something a little more substantial and dove into the butter wedge salad.

After my surgery, I was on a liquid diet for nearly a week and when I finally improved, all I wanted was to bite into something. Here I was biting and actually cutting into my meal. It has been a long time since I actually used a knife and a fork for a meal, and of all things, it was to cut my wedge of lettuce.

Perhaps Annie missed out on potential “cut into your meal” cravings, because I could understand missing this not-so-fun meal normalcy. In any case, the knife and fork allowed me to experience every part of the salad with each bite: crisp lettuce, subtly sweet/soft pear, salty/meaty tempeh bacon, creamy avocado and a creamy/cool sunflower peppercorn dressing. I used a peppercorn dressing base which made for a very intense dressing but it was well balanced with the remainder of the salad.

The recipes in Crave, Eat, Heal span sweet and savoury and most are accompanied by Annie’s photographs. Her recipes are nearly all oil-free (not necessarily low-fat), mostly gluten-free, and without processed foods like white sugar. Her photo of the salad can be seen below.

Mung Bean Tostadas & Lusty Vegan Cookbook Giveaway

Lusty Vegan's Mung Bean Tostadas

I told you it was a good time for vegan cookbooks. Here is the latest cute offering, The Lusty Vegan. It is a cookbook focusing on relationships. Being vegan in a relationship can be a little tricky at times and there are approachable tips and delicious recipes to satisfy the most un-vegan. Trust me, there is almost nothing as sexy than a man that can cook and these recipes span the gamut of simple to complex, such that you might actually want to work together in the kitchen.

Heart of Palm Lobster Rolls, anyone? Tempeh Fries with Dill Avocado Dip? Miso-Vermouth Braised Drunken Bok Choy? Habanero Jackfruit Fajitas? Cherry Cobbler with Cocoa Nibs? These recipes are unique but I will admit, mostly on the elaborate side. They are matched by the stage of the relationship – trying to impress your partner, trying to impress the parents, classic vegan dishes and even desserts if you ever break up.

They make me want to try new dishes but let’s be honest, right now I try to keep things stress-free in the kitchen and I think that helps both Rob and I. Of course, it is natural to want to impress your partner, but it isn’t sustainable. Does that mean we’ve become a boring couple? I certainly hope not. Life just doesn’t always revolve around food. :)

So now, a little about these tostadas. Instead of pinto beans, mung beans substitute in the refried beans. I was curious to try them in something new, although they were a bit mealy for my liking. Although after I covered it with toppings, I barely noticed. I added cooked quinoa, cabbage and carrots, as an ode to my Lime-Spiked Black Bean and Quinoa Kale Wrap. Feel free to add whatever you have lurking in your fridge.

Roasted Cauliflower Salad with Fried Capers and Pickled Currants

Welcome to my latest obsession: fried capers.

If you have yet to try them yet, try to imagine how they would taste. Crunchy, salty little nibbles. It surprised me how much they taste like popcorn, I kid you not. Combined with the pickled currants (tart and sweet), and the avocado (creamy!), this salad was perfectly balanced. I know I say that a lot here, but this salad rises above its peers. It could possibly be my best salad of the year. I thought my Cali-Coco BLT Salad was the best so far, but this week I switched allegiances. It could possibly usurp the former champion, crowned in 2011: The New Best Salad Ever aka Roasted Garlic Tofu Salad with Cilantro Rice, Black Beans and a Mango Salsa.

I am no stranger to quick pickled dried fruits, but the benefit of pickling dried currants instead of raisins, is that you don’t get the goopy juicy raisins that don’t particularly appeal to me.

My inspiration for this fascinating combination was the ever-fabulous Deb of Smitten Kitchen, although I changed many things, including adding the much maligned leafy greens. I also chose to roast my cauliflower and added the fantastically creamy avocado. I look forward to trying her riced fresh cauliflower in the warmer months. The fried capers? Completely her idea. Her poetic prose made me stock up on capers pronto:

Crispy fried capers are one of my favorite garnishes, ever. They are way more interesting than bacon bits — yes, I said it. When you drop capers (that you’ve patted out on paper towels as best as possible) in a little puddle of oil, magical things happen — their layers curl out and crisp, like the world’s tiniest blooming onion. Like all fried, crunchy things, they don’t keep long under the weight of dressing; I recommend adding them only right before serving. I usually use brined capers for this, but both brined and salt-packed will work.

Um yeah, totally try them out. Please.

Laotian Larb Tofu Lettuce Wraps

Laotian Tofu Larb Lettuce Wraps

I told my friend in Houston that I had reached the height of my vegan eats here. There were no new restaurants I wanted to try. She assured me there were so.many.more to try and convinced me to try a nearby Thai restaurant. Oddly enough, Rob has spotted it earlier that week and was amused by its billboard that announced it was MANGO SEASON!

I was apprehensive but she assured me I would love it. She told me they had vegan ice cream. I was sold.

She did not lie. I loved it. So much so, that I quickly tried to figure out how to recreate the dishes.

Laotian Tofu Larb Lettuce Wraps

This is a spin on Laotian larb. Of note, Rob tells me this is nothing like the original and in fact, if you pronounce the r in larb, that is wrong, too.  Make no mistake about its simplicity, this salad wrap was GREAT!

A few fun points: This was the first time I have steamed tofu. I LOVED it. It made it nice and fluffy and once crumbled, it absorbed the flavours of the marinade incredibly well.  Lime juice, cilantro, in a salty-hot-sweet background, it was nice, fresh and light. After an overnight soak, it was absolutely perfect and lasted for a few days of lovely leftovers for lunch.

Laotian Tofu Larb Lettuce Wraps

I took inspiration from the restaurant to serve it next to a quarter of an iceberg. Its solid leaves make for excellent wraps, more sturdy than most lettuces and is rather mild on the green scale. Besides, it is always good to rotate your greens. :)

Eccentric Caesar Salad & Straight From the Earth Review+Giveaway

I don’t tend to get too excited about mock meats (it is a bit processed for my liking), but was really curious after it was selected as the “real chicken” on the Today’s Show. Some things are easier to find in the United States, so with a coupon for a free product (see above), how could we refuse? Beyond Meat isn’t new, but it was new to me and definitely uncannily similar to chicken, complete with the grill marks. You buy it frozen and just need to defrost it prior to serving. Thus, it was super easy to make and great source of protein.

Eccentric Caesar Salad + Straight From the Earth review +giveaway

Now for the book review, as advertised, with an eccentric Caesar salad. Eccentric because it is no standard Caesar. I mean, it is a vegan version of a decidedly un-vegan salad but the twist comes from the nutritional yeast and curry powder in the dressing and the mishmash of additional ingredients. The cashew-based dressing was simply delicious, aka awesome sauce. Paired with the fresh lettuce, buttery avocado, briny capers and hemp seeds, it was a superfood-packed salad. (And by superfoods, I mean super tasting foods!) Instead of the herby croutons, I wanted this to be a complete meal and thus added the chicken-less strips overtop. The strips look a bit too perfectly rectangular but they tasted great.

Eccentric Caesar Salad + Straight From the Earth review +giveaway

The recipe comes from Straight from the Earth, by mother and daughter team Myra and Marea Goodman of Earthbound Farm fame. Neither one is vegan but have created a gorgeous cookbook filled with tantalizing recipes. There is something for everyone between the two cooks. I found myself naturally gravitating to Marea’s recipes, who learned her vegan culinary tricks while living and cooking for fellow vegans in a co-op while at college. Her mother’s tastes are more classical. As an example, Marea has a recipe for chipotle-lime Brazil nuts and Myra has a recipe for double-roasted maple-spiced hazelnuts. OK, OK, both sound delicious. Lots of delicious recipes, including a nut-free crispy baked kale chips with nutritional yeast and shiitake mushroom, water chestnut and tofu lettuce cups.

Hempy Peach Salad with a Creamy Balsamic Hummus Dressing

Peach and Hemp Salad with a Creamy Balsamic Hummus Dressing

Going to the country, gonna eat a lot of peaches… Millions of peaches, peaches for me. {sing along here}

I swear, I wasn’t planning to share so many salads.

But to combat salad ennuis, I kept mixing up new dressings. I didn’t think it would be so spectacular, but I loved it. And then snapped away some quickie photos for you to enjoy the sights of my salad, too.

Fresh, flavourful ingredients are important for a salad; but like pasta is to sauce, salad can be a vector for dressing.

A simple go-to dressing. With hummus on hand, this is so easy to put together. Hummus, balsamic and mustard. I always taste-test the dressing, but this one was hard to read. As I said, I didn’t really think I’d like it; it seemed too tart. Drizzled next to the sweet peaches, though, it all balanced out.

And to finish off my meal? Carrots with the hummus that didn’t make it into the dressing. ;)

Give me leafy greens and I will make salad.

Give me fruit and I will eat it.

Give me a CSA share and I will become creative. Or lazy, your choice.

Same salad, different fruit and new herb. Still as delicious.

I added fresh basil as a unique flavour hidden amongst the greens.

And those hemp seeds? They are really growing on me. They are my new salad topping, including fruit salads. ;) I picked up a few of my pantry staples online, and decided to splurge on these hemp seeds since they were on sale.

I am used to a later peach season from Ontario (and they have finally arrived, too!), but local peaches were out in full force when we arrived in Texas. Sweet, juicy peaches. I have to remind myself that buying too many is often fool-hardy. Their peak ripeness has a short window. But once they are juicy: pounce. Peaches for breakfast, peaches as a snack and peaches for dinner. Peaches for a salad work so well because they make their own dressing, to boot. I still supplemented it with the nice citrus dressing from earlier in the week, though.

Mango Curry Chickpea Salad Wraps

Mango Curry Chickpea Salad Wraps

My parents, truly awesome souls, helped us pack in Toronto before our move. Rob and I (mostly Rob) had tucked our possessions into three categories: 1) perma-storage destined for my brother’s basement; 2) Texas-bound or 3) with us on our roadtrip. Granted, the kitchen was the last thing to be packed, especially since I was still using it.  As our last weekend in Toronto continued, we had packed nearly everything from the kitchen. The cube was nearly full and we had successfully loaded all four of our bikes. (Initially, we were concerned they wouldn’t all fit)

I had one kitchen drawer left. We had to decide what to do with my spices. I have a fewlot. My master plan was to bring my little jars down with me and replenish as needed once I arrived. I had already imposed a no spice replenish ban while in Toronto so I was due for more. For my less used spices, I figured I would simply use what I had left in my jar.

Instead, my Mom suggested I go on a spice holiday. WHAT? No spices for a year?! Even I have my limits. Spices are what make my food taste good!  I was given one bag to fill. All my little jars came with me. Even the empty ones.

Now that the dust has settled, I pounced on these chickpea salad wraps. Sweetened with fresh mango, spiced with ginger and garam masala with a touch of cilantro. Sweet, spicy and tart – a great trio. Mash them up and then wrap it in a lettuce wrap for an easy meal. I was worried I would have needed to add citrus juice, but this wasn’t dry in the slightest. It probably depends on your mango, so your results may vary.

Can you tell I have become more simple in my kitchen? Something about the hot weather makes me more lazy at home. :P

It is hard to believe that just two years ago, in preparation for cycling to/from Ottawa and Kingston, I was already training by cycling to/from Toronto and Kitchener-Waterloo. Our friend was hosting their annual Cinco De Mayo party so I packed my pannier and cycled over. That’s 120km one-way. This year, due to snow and rain, the long cycles haven’t progressed as well. Thus, the trip has been modified to be 70km one way from the train station.

While the party is happening again this year, and I have signed up for Rideau Lakes, I am trying to balance my time between cycling and studying. Studying is winning. Cycling can wait. Passing my exams cannot. Two years ago, I cycled with my buddy, Sue, while Rob stayed at home to study. This year, Rob is cycling with Sue, and I am staying home to study.

Cinco de Mayo was still on my mind, though, as I made these Mexican-inspired almost raw chili salad wraps. I could easily whip these up in Kitchener, had I decided to cycle over myself.

One of the things I love about raw cuisine is that the flavours (usually) pop. Just think of garlic – raw garlic is potent, cooked garlic is muted and slow-roasted garlic is even more mellow.

With a higher emphasis on proteins lately, one thing raw meals lack are good sources of protein. Sure, you could sprout grains and beans, but I don’t really like them as much as their cooked counterparts. That’s probably why I don’t see many recipes for sprouted legumes. “High protein” raw meals usually mean lots of nuts and seeds, which also come with more fat than protein.

In any case, I thought to myself: lets combine the best of both worlds.Beans and flavourful sauces for a high-protein fix. I actually got the idea after Gena posted Brendan’s recipe for a cold chili. Basically all the foundations from a regular chili are combined to make a satisfying dip. It is quite versatile: heat it up to make a regular chili, serve it with chips as a dip, place overtop your favourite green as a salad or place inside Romaine lettuces as a chili salad wrap.

In my study gusto, I appreciate super quick meals. Open a can of cooked beans (I used a canned bean medley), empty out a can of tomato paste, chop up some tomato and green onions and season with chili powder, cumin and lime. Of course, the raw garlic pops out for you, too. It tastes best after a marinade, which means leftovers are just as good, if not better. :)

Spring has sprung? Wishful thinking?

Rob and I took advantage of the glorious weather this weekend to ride our bikes for the first time this year.

Having my bike cleaned and tuned over the winter meant I had a sparkly bike to ride! Except I noticed my fender is broken, so I have to figure out whether I will fix that.

We used this as an opportunity to bike to our new favourite restaurant: Hot Beans. Turns out the shops and restos in Kensington Market are open for the long weekend, YA!

I don’t know why, but it took me a while to finally try out Hot Beans, a fast-food vegan resto with burritos, tacos and nachos… and my favourite: burrito bowls. Sounds possibly terrible, but it is vegan goodness in its glory. Filled with vegan staple goodness: beans, brown rice, salsa, lettuce, chili aoili and vegan cheese sauce with your main topping of choice. Ask about their special menu. Mix-and-match but you can basically pick from Ancho-spiced TVP, seitan, black beans, lentils and Rob’s favourite: BBQ jackfruit. Add hot sauce as you see fit. Rob and I both had similar versions of the The Bill’s Big Dick, aka BBQ jackfruit + Ancho TVP burritos (mine in bowl form, Rob in burrito form).

After being stuffed to the gills, we peddled home. I definitely have to get my legs back into cycling mode as we train for Rideau Lakes again. Hopefully the warmer weather will persist.

I figured we would be Ancho’ed out but later that afternoon, Rob was whipping up Ancho lentils! Destined to be a Rob’s Repeater Recipe, because it was so easy and SO GOOD. This recipe didn’t make PPK’s Top 100 list for nothing! Spicy, but not too spicy, and a bit sweet, these lentils were so flavourful. We went really low-key after such a lunch-fest, stuffing Romaine leaves with the filling and topping them with thick slabs of avocado. Rob doesn’t like collard wraps as much as me, but he gave the Romaine boats two thumbs up. Romaine is definitely sweeter than the darker leafy greens and the inner part of the leaf makes it easy to scoop up a beany filling.

Am I behind the times? Have you made these lentils already? If only Rob didn’t finish off the last of our green lentils with this batch. :)

How do you like green wraps? What’s your favourite? I like collards because they are bigger and easier to make transportable wraps but I was really digging the lettuce this time around.

What I Ate on V-Day (& Cucumber Beet Ginger Juice) (WIAW)

My first WIAW (What I Ate Wednesday). Which was actually a Thursday, and posted on a Saturday.

I have never been one to want to document everything I eat in a day, but by the end of Valentine’s Day, Rob had managed to do most of it on my behalf. HA!  Not the best photos (thank you to fluorescent lights), but that’s all in the spirit of WIAW. (I have supplemented with some other photos). :)

In case my leaks had you wondering as much as me, this is how we celebrated Valentine’s Day through our eats. We are very low-key: not into flowers (not me, at least) and store-bought holiday stuff.

Since I knew Rob had plans for dinner, I started off by baking breakfast for Rob: Peanut butter cookie baked oatmeal. Rob gasped at how much it tasted like a peanut butter cookie (without any flour!). Pictured with Rob’s card. :)

I usually wake up and immediately eat half a grapefruit. Lately I have been drinking some green juice (I make enough to last 3 days or so). This cucumber-beet-ginger juice was delicious. (See recipe below)

A few hours later, when I arrive at work, I eat my steel-cut oats with protein powder. Lately, I have been adding spirulina to it and it makes it an electric green.

For lunch, I had the last of my curry-miso squash and chickpea soup.

Late afternoon, I snacked on an apple.

For dinner, Rob made my African Sweet Potato and Peanut Stew. I like how he scoured my blog for a recipe he knew I would like (I am very predictable that way!). It was one of my favourite dishes in 2010 (such high praise!) and it had obviously been a long time since I’ve had it. He substituted white beans for the kidney beans and served it with red quinoa. He planned for a red-themed meal and solidified it with a sprinkle of smoked paprika. Still as delicious as I remember. Even better (I could taste the love).

For dessert, he surprised me with heart-shaped chocolate hazelnut truffles. Rob thought my recent post was a hint for Valentine’s Day (hahaha, I swear it wasn’t). He spiced things up by using hazelnut butter and made 3 versions: au naturel, some with a whole macadamia nut inside and some with shredded coconut. We obviously had to sample all three (each, of course). I think my favourite was the one with the whole nut. (PS. Yes, this recipe is so easy, Rob made them in under 20 minutes!)

I hadn’t really thought about it until Deb posted her latest carrot soup creation. *swoon*

But it must be true. It is the new year and I am on a carrot kick. Apparently my Mom has also been buying them like they are going out of style. HA!

Perfect for dipping in hummus, I love eating monster carrots like a horse. Chomp, chomp, chomp.

So, I have another carrot dressing for you. (Another hummus recipe is in the queue, no worries). This no-oil carrot dressing is even more creamy from the toasted sesame seeds and sunflower seeds. A little ginger adds some zing but it is tempered by the lemon juice. It looks similar to the carrot miso ginger dressing, but it is definitely richer. A deeper sesame flavour. Similar, yet different. Both delicious. I used Justin’s suggestion of serving the dressing atop a quinoa salad with tomato and avocado and was thrilled with the meal. Especially since my quinoa was warm. And warm salads are fun during winter.

Smashed Chickpea and Avocado Sandwich with Lime and Cilantro

I thought it was getting colder, but then it was a balmy 20C yesterday. Soup time? No, it is sandwich time!

I don’t eat sandwiches very often.

I still drool over delicious sandwiches, though.

Including this one from Two Peas and their Pod.

Like a souped up guacamole, this combined both of my versions. Chunky like my pineapple and cucumber guacamole but ramped up with chickpeas like my edamame guacamole. Filled with fresh cilantro, a zip from green onions and citrus tang from lime, this worked really well.

You could use this as a dip with big crackers. Or slather it onto your next sandwich or wrap. Whatever you decide, you know it will be a tasty spread.

And about that bread? It is an interesting sourdough rye bread. You can actually store it unopened at room temperature for 6 months. Something about it being double-baked or something. I first tried it in Calgary, but recently spotted a few versions at a nearby health food store, Foods for Life. And you know what?  Their tempeh is just as cheap ($3.59) as Tutti Fruiti!

There are a few reasons I don’t eat bread. One is because I don’t really like it. This bread was interesting, but not my favourite. It was merely a vector for the delicious filling. The best part was definitely in the middle!!
