Autumn Chickpea and Lentil Soup

Last weekend, we tore up our garden. I think we did pretty well for keeping the garden going until the end of October. The tomato and tomatillo plants were ripped out, asparagus ferns chopped off, new garlic planted and we made a new lasagna compost garden to be ready for us next spring.

We continue to harvest a bit, too. I may even be able to store some of the Ayocote Morado runner beans, which only started to produce bean pods in September despite a summer of glorious red blossoms. I harvested them, too, but they are bright green and lush. I will try to dry them indoors. The kale keeps growing, though, and I hope to keep it going to capture some seeds next year. Mesquite Roasted Pumpkin Seeds

Nothing like having a baby to bring you into the spirit for Hallowe’en. Not that my little guy knew what was going on, but we dressed him up and introduced him and ourselves to our neighbours on our street.

This was also the first year we made pumpkin jack-o-lanterns!

My mom had a (self-imposed) daunting task: use up all the poppy seeds. How many poppy seeds could she possibly have? A cup or two? No, more like 10 cups of poppy seeds. Garlic Sauteed Beet Greens

I hope you believe me. I had seen it multiple times but never believed it myself: beet greens taste great. I assumed they would be bitter or taste like dirt. But nope, they are as silky as sauteed Swiss chard and not nearly a strong flavour, almost sweet. Blanching them then tossing with seared garlic was an easy way to make them delicious and an easy way to eat lots of greens.

Is it still salad season? I am loving the lingering warm weather, especially since it is no longer sweltering. I try to make it a daily goal to go for a walk with my baby every day. At least every weekday. At first, he was content with the stroller, but it can be hit-or-miss and result in a crying fit, so we’ve gravitated to wrapping. I never thought I’d be into hardcore babywearing. I knew I’d want to do some babywearing since skin-to-skin is so important, but my guy is a snuggle monster and loves to be wrapped. Or as Rob says, he demands to be snuggled. For now, I am delighted to oblige as I can still walk around and do simple things around the house. Read the rest of this entry »

Our tomato consumption is still going strong but I would hate to bore you with so many consecutive tomato recipes. Another garden winner this year were the boisterous tomatillo plants. I have given away more tomatillos than I have eaten myself. Most of my friends have made and canned salsa verde. I don’t have the time or equipment to can this year, so I looked for less traditional ways to use tomatillos. When I spotted Alissa’s chickpea chile verde, I knew we had a winner!

I forgot to mention in my last food post, but roasted tomatoes freeze incredibly well. They last a while in your fridge but if you want to savour some summer bounty during the winter, batch cook them up and stockpile them in your freezer. Last year, I bought a bushel of red bell peppers, chopped them up and froze them, and we are still eating through them!

If you need any ideas what to do with all this frozen (or fresh, if you have some made already) roasted tomatoes and bell peppers, I urge you to try this soup.

So how about more tomatoes? Ooey, gooey, melt in your mouth roasted tomatoes. But you don’t have 45 minutes to an hour to wait, or even 3 hours for a  super slow roast. Because you might have a baby that doesn’t leave you much time between his eat-sleep-poop cycle.. How about 20 minutes? Maybe that’ll work, just maybe.

It is local corn season!

This baby business has had me cooped up most of the spring and summer and it is nice to finally feel like the early hazy days have lifted somewhat. It only took 9 weeks. One problem with having a preemie is that his newborn period runs longer.  We have to wait for his corrected age for him to develop his milestones. So no, he isn’t sleeping through the night just yet. Not even close.

But, it was nice to wake up while corn season is in full force. Rob can grill the corn pretty quickly and if you have any leftover, or can spare a handful of cobs, this is a fantastic soup. Read the rest of this entry »

I certainly do not profess to being prepared for the onslaught of emotions, fatigue and physical recovery following birth. Despite being on bedrest for nearly 2 months, I think we were even less prepared than had I been at home and able to move around. It takes a village to raise a child, right?  My parents and Rob helped out tremendously in the first few weeks, making sure the house was clean and we were fed. Wow, it is incredible what a bit of sleep can do for you.

The good news is that Baby P is now home from the NICU but he has grown up enough such that his previous 3 hour around the clock feeding schedule didn’t come home with him. It was closer to every 2 hours when we were discharged home and let me tell you, when feeding can take 30-45 minutes and followed by a 20 minute pumping session, this doesn’t leave a lot of time before the cycle resumes once again.  Best Vegan Chocolate Cupcakes with Chocolate Buttercream Frosting

First of all, some news. As you may have noticed, I have not been posting nearly as often this year. At first, this was due to first trimester pregnancy food aversions and fatigue and later on, I had pregnancy complications that kept me on rest in and out of the hospital. A couple weeks ago, Rob and I welcomed our baby boy into the world. He is a small fighter and will be in the hospital for a while, but we are thrilled he is doing so well for now. Between the NICU visits and exclusively pumping for him, life has been filled with fatigue and we know it will only get worse. Please forgive me for my patchy posting schedule.

Because I was in the hospital, my baby shower was cancelled with 2 days notice. My mom, of course, was already ready to party and had these delicious cupcakes prepared for dessert. While I was sad to miss my own baby shower, it meant Rob and I (with some help from my parents and brother) basically ate all the cupcakes. They actually didn’t last that long in our house.

Classic Chana Masala

In the past few months, and last few weeks especially, Rob has had to do a lot more around the house. And when Rob does the cooking, it means the kitchen is filled with curry.

More of a creature of habit than me, Rob has been cooking through our favourites, Dal BhatTamarind Lentils and innumerable batches of Creamy Broccoli Dal.

He must have become bored, because one day he opened up his favourite cookbook, 660 Curriesand made chana masala.

Want to know what I would consider a lot of spinach? 2 pounds.

It can take me a week to finish a clamshell of baby spinach but I I figured 2 bunches of regular spinach would be 2 lbs. After prepping and removing the stems from both bunches, I barely had a pound of spinach.

Still eager to make this dish, I added our emergency package of frozen spinach (the convenience of it being de-stemmed was not lost on me) and while I still didn’t have enough spinach for the recipe, it was certainly plenty of spinach! Read the rest of this entry »
