 Best Vegan Chocolate Cupcakes with Chocolate Buttercream Frosting

First of all, some news. As you may have noticed, I have not been posting nearly as often this year. At first, this was due to first trimester pregnancy food aversions and fatigue and later on, I had pregnancy complications that kept me on rest in and out of the hospital. A couple weeks ago, Rob and I welcomed our baby boy into the world. He is a small fighter and will be in the hospital for a while, but we are thrilled he is doing so well for now. Between the NICU visits and exclusively pumping for him, life has been filled with fatigue and we know it will only get worse. Please forgive me for my patchy posting schedule.

Because I was in the hospital, my baby shower was cancelled with 2 days notice. My mom, of course, was already ready to party and had these delicious cupcakes prepared for dessert. While I was sad to miss my own baby shower, it meant Rob and I (with some help from my parents and brother) basically ate all the cupcakes. They actually didn’t last that long in our house.

This weekend was cookie overload.

I baked 110 cookies Saturday morning and by the end of the day, I had sampled 7 different cookies and returned home with 7 different cookie dozens. Yes, I went to my first vegan cookie exchange!!

If you saw a plane trying to land at the Island Airport at that time (I didn’t see us in the video), I was there. We circled back and forth between Toronto and St Catharines as we waited for a clearing to land. The landing was probably the most rocky I had endured and it was only afterwards, gawking at the photos in the comfort of my own home, did I realize what we had missed.

(Hopefully they got some awesome wedding pictures)

Smoky Apple Bourbon Barbecue Sauce

Anyways, Rob and I had a very quick weekend trip over the long weekend out to New Hampshire for some relaxation and hiking in the White Mountain National Forest. Rob was in Boston for a conference but when I flew down, we opted to head outside the city instead. If you like outdoors, this is a great place to visit. We stayed with a host through AirBnB and it was almost like our own piece of heaven.

I had been talking about making Bourbon-spoked barbecue sauce for a while, but we had no Bourbon nor whiskey. Our trip to duty-free solved that and I quickly followed through with my promise of homemade barbecue sauce. Earlier this year, I made Miyoko’s zippy barbecue sauce (fabulous, by the way) and found it oh, so easy and was equally delighted with this concoction.

Smoky. Apple-infused although I couldn’t really taste the apple. And the Bourbon was in there, too. The Bourbon is more of an aftertaste after the alcohol is simmered away, adding depth to the sauce. A bit on the spicier side but I loved it. So, even if you do not like whiskey (hello, me!) and even if you do (hello, Rob!), you will love this. I imagine this will be gone by the end of the weekend. Veggie burgers really do better with something saucy slathered overtop.

Abby’s Vegan Pumpkin Pie with a Pecan-Oat Crust

Abby's Vegan Pumpkin Pie with a Pecan-Oat Crust

While it still feels like summer in Toronto, it is hard to believe Thanksgiving is quickly approaching. And as I was writing up my recipe for raw macadamia vanilla cream, I realized I never shared this fabulous recipe with you.

It still makes me smile that one of my co-workers, Abby, made a vegan and gluten-free pumpkin pie with me in mind for last year’s Thanksgiving.  Abby graciously let me take home all the leftovers which I enjoyed. Sadly, I was hoping to get better photos. I don’t think these do it any justice but figured I should still share the great recipe with you.

Abby's Vegan Pumpkin Pie with a Pecan-Oat Crust

Pumpkin pies are ubiquitous in the US around Thanksgiving but this pie was better than your traditional fare. A mixture of both pumpkin and sweet potato purees with a custard texture from tofu worked really well here. It was perfectly sweetened with a hint of savoury notes from the cinnamon and nutmeg. The recipe will make more filling than you need for one pie, which might work out nicely if you have a vegan friend who really wants all the leftovers. 😉

The crust was awesome, too, just a bit on the brown side, but with a spiced pecan background that worked well with the pumpkin pie.  As I pay more attention to the recipe, it looks like Abby took some inspiration for the crust from my pecan-shortbread crust I used with a lemon-cheesecake. You may not even need to pre-bake the crust like Abby did, so keep that in mind.
