Quinoa Protein Bowl & Healthy Lunch Box Ideas

Lately my meals have been a lot of random foods. I am holding out. I knew I had some staples waiting to be unpacked but quickly replenished my perishable staples (tahini, peanut butter, maple syrup, etc). As such, the last few weeks have had me cooking without spices, relying on strong-flavoured ingredients and let’s be honest, I bought some pre-made soups and added some beans to make it a complete meal.

I promise to share some of my fun meals once my home is back to normal. Until then, I will continue to unearth some oldies-but-goodies from my backlog. I chose to share this one because it is actually pretty similar to what I am eating these days: cooked quinoa, random vegetables, beans, topped with a creamy sauce.

  1. I love mixing and matching for lunch. This bowl looks so good! I’ll often have leftovers and add some protein, veggies, grains, etc. I really love lunch!

  2. I haven’t been able to find tahini in my local UK supermarkets. It’s terrible! I think of it as a staple too and I’m thinking I may have to make my own.

    I’d love this for lunch, or any time🙂

  3. This looks very much like many of my lunches! Grains, beans, and veg, together forever. I think it helps a lot to have leftovers or quick-cooking ingredients around — instant couscous, for instance, is a mainstay. And vegetables that are just cut up and ready to be eaten raw or thrown into a quick stir-fry are a lifesaver! Now I’m hungry for lunch.🙂
